5 Healthy & Delicious Recipes for Summer

Updated: Sep 1

Summer is my favorite season! I love all the fresh produce at the Farmer's Market, the beautiful sunsets, and TRAVEL!

I've rounded up five healthy & delicious summer recipes that are not only nutritious, but taste AMAZING! Whatever you are up to this summer, I've got you covered. Read on some easy & healthy summer recipes.

1. Mediterranean Quinoa Salad

Mediterranean Quinoa Salad

This is one of my FAVORITE recipes for summer, and for good reason- it's easy, full of good-for-you veggies + fiber, and it's a delicious dish that's best enjoyed COLD- perfect for a hot summer's day! This is one of my favorite meals to meal prep on a Sunday for an easy, health weekday lunch. Get the recipe here.

2. Vegan Strawberry & Sunbutter Smoothie

Vegan Strawberry Sunbutter Smoothie

Another delicious cold recipe to keep you cool on a hot summer day. I love to have this for breakfast, post-workout. Sunbutter = sunflower seed butter and not only is it soooo creamy, but it's a nice change from the usual almond butter or peanut butter that most smoothies call for. It's berry season, so go to your local Farmer's Market and grab some freshly picked strawberries, freeze them, and throw them in this smoothie! Get all my vegan smoothie recipes here.

3. Paleo Peach Cobbler

Paleo Peach Cobbler

Take advantage of the end of peach season and make yourself this yummy treat! I LOVE eating healthy, but I refuse to skip out on dessert. Choosing paleo desserts is the best of both worlds for me- paleo desserts only use natural sweeteners like maple syrup, dates, honey, and fruit of course! Top it with your favorite ice cream or "nice cream" and your friends and family won't even know that it's healthier than traditional cobbler. Get the recipe here.

4. Cacao Energy Bites

These little energy bites are the PERFECT make-ahead, healthy snack for all your summer travels! Full of healthy fats, fiber and nutrients, these healthy bites make a great breakfast on the go or snack to satisfy hunger and balance blood sugar. Make a big batch and keep them in the freezer for all your summer activities. Get the recipe here.

5. Creamy Jalapeno Dip

Creamy Jalapeño Dip

This Creamy Jalapeno Dip is my MOST POPULAR recipe, and for good reason- not only is it Whole 30 approved, but it's a crowd pleaser and no one will know how nutritious it is! Serve it at your next pool party and your guests will be begging for the recipe. Keep it in the fridge and serve it on tacos, fajitas, or just eat it with chips. Get the recipe here.
