Cacao Energy Bites
Gluten Free | Refined-Sugar Free | The Perfect Afternoon Snack
The perfect afternoon snack! I usually try to have a hearty snack around 3pm each day to keep my energy up and make sure I'm not ravenous by dinnertime. These little bites are so delicious and full of nutrient-dense foods.
Cacao, which is chocolate in its rawest form, is a great source of Magnesium (which most people are deficient in). Flaxseed is a great source of fiber which helps in fighting hunger. Keep these on hand for a snack, breakfast on the go, or a healthy sweet treat.
Ingredients:

1 cup rolled oats (I like Bob's Redmill extra thick organic oats)

1/2 cup ground flaxseed

1/3 cup cacao nibs

1/2 cup smooth raw peanut butter (I like Spread The Love brand because it's more liquidy)

1/3 cup honey

1/3 cup toasted unsweetened coconut shred (you can find these at most grocery stores)
Mix all ingredients in a large bowl, then place in the fridge for 30-60 minutes (to help the oats absorb the moisture and make it all stick together). Use a spoon and your hands to roll them into 1-1.5 inch thick balls and keep refrigerated.
