Creamy Jalapeno Dip

You've just met your new favorite dip!

Seriously-- this is my most popular recipe, and for good reason. This mouth-watering dip will impress anyone who likes Tex-Mex food. It tastes just like the dip that many Tex-Mex restaurants serve, except their has a ranch dressing base, while mine is completely clean! 

The trick is to use cashews as the base- When soaked in water, cashews soften and become a great base for any creamy recipes that you would have used cream or butter for in the past. Try it and see for yourself- you'll be making a batch of this once a week, trust me!

Ingredients:

  • 3/4 cup cashews, softened (see notes)

  • 1 whole bunch of cilantro (try to use it on the same day you buy it when it's super fresh!)

  • 1 medium de-stemmed jalapeno, seeds & all (if you are sensitive to spicy food, start with half and add more as you taste it)

  • 1/2 cup water +

  • Juice of 1 large lime or 2 small limes

  • 1 tsp salt

  • 1 tsp black pepper

 

Instructions:

Place all ingredients in a high-powered blender and blend on HIGH for 45-60 seconds until you have a smooth mixture. If it's too think for you, add a little more water until you reach your desired consistency. If you are sensitive to spicy food, start with half a jalapeno, blend the ingredients, taste it and then add more jalapeno if you wish. 

Notes:

How to "soften" cashews- soak them in water for at least 2 hours (up to 6) and drain the water out before using them. 

To make this taste the best, make sure to get super fresh cilantro that is fragrant when you put it close to your face- that means it's fresh!
