Paleo/Vegan Almond Cookies

These are my absolute FAVORITE cookies! Sweet (but not too sweet), slightly salty, chewy and then that nice crunch from the chopped almonds… it is a full experience for your taste buds! These cookies are vegan, paleo, gluten free, dairy free, and refined sugar free. I personally LOVE the flavor of almond extract so they really hit the spot for me. Try them with tea for an added treat!
Quick note on almond extract- almond extract is not TECHNICALLY paleo because it's got alcohol in it, but because it's used in such small amounts + the alcohol bakes out, most paleos still consume foods baked with it.
Ingredients:

2 cups blanched almond flour

1/4 cup coconut oil

1/3 cup maple syrup

1 tsp pure almond extract

1/2 tsp baking soda

1/2 tsp pink salt (preferred) or finely-ground sea salt

1/3 cup raw almonds, chopped into tiny pieces
Instructions:
Preheat oven to 350 degrees. Line a baking sheet with non-toxic parchment paper (I like "If You Care" brand, listed below). In a large bowl, mix the dry ingredients (almond flour, baking soda, and salt). Then slowly add the wet ingredients one by one (coconut oil, maple syrup, and almond extract). Keep mixing until a dough forms, and gently fold in the chopped almonds.
Use a cookie scoop (preferred) or a spoon to scoop out 1-inch balls of dough onto the baking sheet. Using the back of a spatula, flatten the dough rounds so they make a disk (they don’t spread when cooking, so this makes sure they get a good cookie shape).
Bake in the oven for 9-11 minutes. I personally prefer to pull them out right at 9 minutes when they are still slightly doughy in the center, since they continue cooking on the pan while they cool!
Allow to cool for 5-10 minutes before using a spatula to remove from pan. Best enjoyed warm with a cup of tea or milk 😊
