Healthy Gluten-Free Cookie Dough Dessert Bites

I am an avid cookie dough lover and while in the search for a recipe that would make my love for cookie dough mix healthier, I ended up creating a gluten-free and refined sugar-free cookie dough mix recipe.
Let’s face it. Eating cookie dough can be an unhealthy habit but just because traditional cookie batter can contain unhealthy ingredients that does not mean we have to remove this delicious dessert from our recipe book. Although you can always experiment, today I bring you my recipe for how I made my dessert a lot healthier. Ingredients

1 cup of organic gluten-free oat flour (keep it on hand in case you need a little more to get the right consistency)

4 tablespoons of Ghee or Coconut Oil

1 teaspoon of salt

1 teaspoon of Vanilla Extract

1/3 cup of Maple Syrup

1/4 cup of chocolate chips to include in the mix

1/2 of a cup with chocolate chips for melting and decorating.
As I mentioned in the beginning this recipe is gluten-free and it does not use any refined sugars for sweetening. As you’ll see in the ingredients, my recipe uses Maple syrup and Vanilla Extract. Also, when it comes to the chocolate chips, I love and recommend @paschachocolate unsweetened chocolate chips, this of course to continue with the healthy idea of our cookie batter recipe. You can read more about them on their Instagram page here but to summarize why I choose them is because their chocolate chips are vegan, organic and their chocolate is harvested by socially certified Peruvian farmers.
This recipe can take between an hour and a half or two hours and a half depending on the consistency you want to give to your cookie dough dessert. Also, depending on how you distribute the cookie dough mix you can get up to 5 bite-sized chocolate chip cookie dough balls. This is a very easy recipe that just requires a mixing of ingredients and time in the fridge, which ultimately turns into a great dessert of edible cookie dough for one or a snack for an evening between friends, family, and loved ones. The specific instructions are below:
Healthy Cookie Dough Bites Instructions:

Mix gluten-free oat, flour, and sea salt.

Add some Ghee or Coconut Oil.

To sweeten, add maple syrup and vanilla extract.

To finish off our ingredients, add the chocolate chips.

Cover the mix and place in the refrigerator for one or two hours, ensuring the mix is slightly firm.

Scoop out the mix into even mounds and use your hands to roll them into delicious cookie dough balls.

The rest of the chocolate chips can be melted to cover or drizzle over the cookie dough balls.

Once decorated with chocolate, place them in the refrigerator again for 20 minutes.

Finally, serve and enjoy.
