Cinnamon Honey Glazed Carrots

I have always loved carrots since I was a kid. I recently went to Costco and got a huge bag of carrots and have been trying to find creative ways to use them. Although I usually go for more savory dishes when it comes to carrots, I had a sweet craving and decided to play around with something sweet... and these Cinnamon Honey Glazed Carrots were born! Super easy to make in ~10 min and just sweet enough, these carrots pack a ton of nutrients (like beta-carotene and fiber) and make for an excellent, healthy dessert.
Ingredients:

3 medium sized carrots, peeled or not (your choice), sliced into small disks or julienned

2 tbsp ghee, butter, or coconut oil if vegan

1-2 tbsp honey or maple syrup if vegan

1 tsp ground cinnamon
In a small sauce pan with a lid, warm up the ghee/butter/coconut oil on Medium/Low. Add the carrots and mix well to distribute evenly. Cover and turn the heat to low, allowing to sit and stirring every 2-3 minutes. After ~8 min, start to check the carrots- you want them to be soft but not mushy. Once they've reached your desired tenderness, add in the cinnamon and stir well to coat evenly. Transfer to a plate and add a drizzle of honey or maple syrup on top until your desired level of sweetness is reached.
