Paleo Salted Caramel Hot Chocolate

This is the perfect treat for Christmas Eve. I love this hot chocolate because it's not too sweet, and it's also full of healthy fats so just a little bit fills me up. It's rich in flavor and has a silky texture. A cup of this paired with a Christmas movie and a warm blanket=major Christmas vibes!

Serves: 2

Ingredients:

  • 1 cup filtered water

  • 1/2 cup full-fat coconut milk (I buy it in a BPA-free can)

  • 2 T date syrup

  • 1 tsp salt

  • 1-2 oz unsweetened chocolate

Instructions:

1. Place all ingredients in a small saucepan over the stove on medium-low heat.

2. Continuously stir for 5-6 minutes until chocolate is fully dissolved.

3. Pour into mugs and enjoy immediately. 

Optional toppings: I topped with homemade coconut whipped cream (using this recipe), crushed unsweetened chocolate, a drizzle of date syrup and a sprinkle of sea salt.

Recipe notes:

Start with 1 oz of chocolate. If you like a more intense chocolate flavor, add more. I settled at 1.5 squares of unsweetened chocolate which was ~1.5 oz.
