Irresistible, No-Sugar-Added, Fudge!

I love dessert. Actually, I live for dessert. I've probably eaten my dessert before my dinner more times than I'd like to admit. I've potentially eaten my dessert AS my dinner a time or four as well. 

 

This fudge was created partially by accident, partially by divine intervention. I was craving something sweet and had nothing that could satisfy my sweet tooth, so I went in the pantry and found some Stevia-sweetened chocolate chips, almond butter and coconut oil. I was planning to melt it all together and dip some fruit in it.

 

I got busy and ended up throwing the mixture in the fridge to take care of later.When I opened my fridge an hour later, I had created a new dessert- FUDGE!

 

This is SO easy and SO delicious. The sweetness from the chocolate chips paired with the savory flavor of the almond butter, and the added sea salt.... I'm drooling thinking about it. Plus, you'll get a big dose of healthy fats which will keep you satisfied and keep sugar cravings at bay.

 

You can use regular chocolate chips, but keep in mind that will increase the amount of sugar. I opted for Lilly's Stevia-Sweetened Chocolate Chips which you can find at Sprouts, Whole Foods and some HEB's.

 

This keeps it low in sugar, dairy-free and non-GMO (Assuming that you use raw almond butter with nothing added to it).

 

You can literally mix this up and melt it before dinner, pop it into a pan and put it in the freezer, and by the time your dinner is done, dessert will be ready! 

 

Irresistible, No-Sugar-Added, Fudge

 

Prep Time: 5 minutes

Freezer Time: At least 30 minutes

 

Ingredients:

1 bag Lilly's Stevia-sweetened chocolate chips 

1/2 cup Organic Raw Almond Butter 

1/3 cup Unrefined, Virgin Coconut Oil

1/4 TBSP Sea Salt (add more or less to taste)

 

Optional:

If you like your "fudge" to be crunchy, you could add a cup of crushed almonds and/or toasted coconut flakes.

 

Instructions:

  1. Put all ingredients besides the salt into a microwave-safe bowl. Microwave for 1 and 1/2 minutes, stopping to stir every 10-15 seconds. Continue until a liquid texture is achieved- could take more or less time depending on your microwave. 

  2. Pour the liquid into a glass pan and put in the freezer. 

  3. About 10-15 minutes in, sprinkle the sea salt onto the fudge (you can do it right away, but the salt sinks down to the bottom. Tastes the same regardless, but it looks prettier with the salt sitting in top!)

  4. Let sit in the freezer for 30 minutes, then pull out and cut into 1-2 square inch pieces (it's very rich, so I recommend doing small pieces). 

 

Tips:

  • If you can't pull it out of the freezer right away, it might freeze a bit harder, so just let it sit on the counter for 30-45 minutes before cutting it up. 

  • I make my recipes in small portions, so I use a glass 32 oz Pyrex container for the fudge. You could easily double the recipe and use an 8x8 or 9x9 glass pan instead!

  • Store in the fridge, or freezer if you want it to last longer.
